Instructions

  1. Prepare the dough
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  2. Mix dry ingredients
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.
  3. Add the mix-ins
Fold in the semi-sweet chocolate chips and mini marshmallows until evenly distributed throughout the dough. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the dough.
  4. Prepare for baking
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. Scoop the dough using a 2-tablespoon cookie scoop and place the dough balls about 2 inches apart on the prepared baking sheets.
  5. Bake the cookies
Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers still appear slightly soft. The marshmallows will puff up and may brown slightly. Allow the cookies to cool on the baking sheets for 5 minutes.
  6. Add white chocolate drizzle
Transfer the cookies to a wire rack to cool completely. Melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Using a fork or a piping bag, drizzle the melted white chocolate over the cooled cookies. Allow the white chocolate to set before serving.
