
Homemade Calzones
Italian folded pizza pockets filled with cheese and toppings

Prepare the doughIn a large bowl, dissolve yeast and sugar in warm water. Let stand for about 10 minutes until foamy. Add flour, salt, and olive oil. Mix until a soft dough forms. Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

Prepare the fillingWhile the dough rises, combine mozzarella, ricotta, and Parmesan cheeses in a bowl. Add the cooked Italian sausage, 1/4 cup of marinara sauce, dried oregano, and dried basil. Mix well and set aside.

Form the calzonesPreheat oven to 425°F (220°C). Punch down the risen dough and divide into 4 equal portions. On a floured surface, roll each portion into an 8-inch circle. Spoon a quarter of the filling onto one half of each circle, leaving a 1-inch border. Brush the edges with water.

Seal and prepare for bakingFold the dough over the filling to form a half-moon shape. Press the edges firmly to seal, then crimp with a fork. Transfer calzones to a baking sheet lined with parchment paper. Cut 2-3 small slits in the top of each calzone to allow steam to escape. Brush with beaten egg for a golden finish.

Bake to perfectionBake in the preheated oven for 18-20 minutes, until the calzones are golden brown. Remove from the oven and let cool for 5 minutes before serving.

Serve with sauceWarm the remaining marinara sauce in a small saucepan. Serve the calzones hot with the warm marinara sauce on the side for dipping.
