  1. Prepare the marinade
    In a small bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, thyme leaves, rosemary, lemon zest, salt, pepper, and red pepper flakes if using. Whisk until well combined.
  2. Marinate the fish
    Pat the fish fillets dry with paper towels. Place them in a shallow dish and pour the herb marinade over them, turning to coat both sides. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat the grill
    Preheat your grill to medium-high heat (about 400°F/200°C). Clean and oil the grill grates thoroughly to prevent sticking.
  4. Grill the fish
    Remove the fish from the marinade, letting any excess drip off. Lightly brush both sides of the fillets with additional olive oil. Place the fish on the preheated grill, skin side down if the fillets have skin. Close the lid and cook for 4-5 minutes.
  5. Flip and finish cooking
    Carefully flip the fillets using a wide, flat spatula. Cook for another 3-4 minutes with the lid closed, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  6. Serve
    Transfer the grilled fish to a serving platter. Garnish with additional fresh herbs and serve immediately with lemon wedges on the side.
