Instructions

  1. Prepare the yogurt base
In a large bowl, combine the Greek yogurt with honey and vanilla extract. Stir well until the mixture is smooth and the honey is fully incorporated. This creates the creamy base for your breakfast bowls.
  2. Prepare the fruit
Wash all berries thoroughly and pat dry with paper towels. Slice strawberries if large. Peel and slice bananas. If using mango, peel and dice into small cubes. Keep all fruit separate until assembly.
  3. Toast the nuts and coconut
In a dry skillet over medium heat, lightly toast the sliced almonds, chopped walnuts, and coconut flakes for 2-3 minutes until fragrant and golden brown, stirring frequently to prevent burning. Remove from heat and let cool completely.
  4. Assemble the bowls
Divide the yogurt mixture evenly among 4 serving bowls. Top each bowl with an equal portion of the mixed berries, sliced bananas, and mango if using.
  5. Add the crunchy toppings
Sprinkle each bowl with granola, toasted nuts, coconut flakes, chia seeds, and ground flaxseeds. The varying textures will add delightful crunch and extra nutrition to your breakfast.
  6. Finish and serve
Drizzle each bowl with a little extra honey. Serve immediately while the granola is still crunchy, or cover and refrigerate for up to 2 hours before serving if needed.
