Prepare the grass jellyIn a medium saucepan, bring 3 cups of water to a boil. In a separate bowl, mix the grass jelly powder with 1 cup of cold water until dissolved. Once the water is boiling, slowly pour in the grass jelly mixture while stirring continuously to prevent lumps.

Cook the jelly mixtureReduce heat to medium-low and add the granulated sugar. Continue stirring for about 5-7 minutes until the mixture thickens slightly and the sugar is completely dissolved. Remove from heat.

Set the jellyPour the hot mixture into a rectangular container or individual serving cups. Allow it to cool to room temperature, then refrigerate for at least 3 hours or until completely set. The jelly should be firm but slightly jiggly when touched.

Prepare the coconut syrupWhile the jelly is setting, combine coconut milk, palm sugar, and salt in a small saucepan. Heat over medium-low heat, stirring occasionally until the sugar dissolves completely, about 5 minutes. Do not let it boil. Remove from heat and let it cool, then refrigerate until ready to use.

Cut the jellyIf using a large container, once the jelly is set, cut it into 1-inch cubes or use a spoon to break it into bite-sized pieces. If using individual cups, you can leave the jelly whole.

Assemble the dessertIn serving bowls, place the grass jelly cubes first, then add cooked tapioca pearls, sweet red beans, and diced fruits. Add crushed ice on top of the mixture.

Add the syrup and servePour the chilled coconut syrup over each serving, garnish with mint leaves, and serve immediately. Provide spoons for mixing the ingredients together while eating.
