  1. Prepare the sago pearls
    Bring 6 cups of water to a boil in a medium saucepan. Add the sago pearls and cook for about 10-12 minutes until they turn translucent with a small white dot in the center. Remove from heat, cover, and let stand for 5 minutes until completely translucent.
  2. Rinse the sago pearls
    Drain the sago pearls in a fine-mesh sieve and rinse under cold running water until cooled. Transfer to a bowl of cold water and set aside to prevent sticking.
  3. Prepare the fruit
    Peel and dice 2 mangoes, reserving the third for garnish. Blend the diced mangoes until smooth to create a puree. Peel the pomelos and carefully separate the segments, removing all membranes and white pith.
  4. Make the base mixture
    In a large bowl, combine the coconut milk, evaporated milk, sugar, mango juice or puree, and condensed milk. Stir until the sugar is completely dissolved and the mixture is smooth.
  5. Combine the dessert
    Drain the sago pearls thoroughly and add them to the milk mixture. Add the cold water and stir gently to combine. Refrigerate for at least 1 hour to chill completely.
  6. Add the fruit
    Just before serving, fold in most of the pomelo segments and diced mango, reserving some for garnish. Adjust sweetness if necessary by adding more sugar or condensed milk.
  7. Serve chilled
    Ladle the dessert into serving bowls or glasses. Top with the reserved mango cubes, pomelo segments, and a few mint leaves. Add ice cubes if desired for an extra refreshing touch.
