  1. Prepare the gelatin
    In a small bowl, sprinkle the gelatin powder over 1/4 cup cold water and let it sit for 5 minutes to bloom. The gelatin will absorb the water and become soft and translucent.
  2. Heat the almond mixture
    In a medium saucepan, combine the almond milk, 1 cup water, and sugar. Heat over medium heat, stirring occasionally, until the mixture just starts to simmer and the sugar has completely dissolved. Do not let it boil.
  3. Combine and dissolve
    Remove the saucepan from heat. Add the bloomed gelatin to the hot almond milk mixture and stir continuously until the gelatin is completely dissolved, about 2 minutes. Stir in the almond extract.
  4. Pour and chill
    Pour the mixture into a square or rectangular dish or individual serving cups. Allow to cool at room temperature for 30 minutes, then cover with plastic wrap and refrigerate for at least 4 hours or overnight until completely set.
  5. Serve the dessert
    Once set, cut the almond tofu into cubes if made in a large dish. Serve cold with fruit cocktail, fresh berries, and a drizzle of honey or maple syrup if desired. Sprinkle with toasted sliced almonds just before serving.
