
Ghanaian Groundnut Soup
Rich West African peanut stew with tender chicken and spices

Prepare the chickenSeason the chicken pieces with salt and pepper. In a large pot, heat 2 tablespoons of oil over medium-high heat. Brown the chicken pieces on all sides, about 5-6 minutes. Remove and set aside.

Create the flavor baseIn the same pot, add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic, grated ginger, and diced peppers, and cook for another 2 minutes until fragrant. Stir in the diced tomatoes and tomato paste, cooking until the tomatoes break down, about 5-7 minutes.

Combine the soupReturn the chicken to the pot. Add the chicken broth, ground coriander, cumin, and bay leaves. Bring to a boil, then reduce heat to a simmer. Cover and cook for 30 minutes until the chicken is tender.

Add the peanut butterIn a separate bowl, take about 1 cup of the hot broth from the pot and whisk it with the peanut butter until smooth. Pour this mixture back into the pot, stirring well to incorporate. Simmer uncovered for another 15-20 minutes, allowing the soup to thicken.

Adjust the consistencyIf the soup is too thick, add more broth or water. If it's too thin, continue to simmer until it reaches your desired consistency. Taste and adjust the seasoning with salt and pepper as needed.

Serve the soupRemove the bay leaves. Ladle the soup into bowls. If desired, you can remove the chicken pieces, shred the meat, and return it to the soup before serving. Garnish with fresh chopped cilantro and crushed peanuts. Traditionally served with fufu, rice, or crusty bread.
