  1. Heat the water
    Heat filtered water to 175°F (80°C). The temperature is crucial - water that's too hot will make the tea bitter. Remove from heat once it reaches the correct temperature.
  2. Warm the teapot
    Pour a small amount of the heated water into your teapot, swirl it around to warm the pot, then discard the water. This helps maintain the brewing temperature.
  3. Add the tea leaves
    Add 4 tablespoons of genmaicha tea leaves to the warmed teapot. If using extra toasted brown rice for a stronger nutty flavor, add it now.
  4. Steep the tea
    Pour the hot water over the tea leaves and steep for 2-3 minutes. Avoid steeping longer as it can make the tea bitter. The color should be a pale yellow-green with a nutty aroma.
  5. Strain and serve
    Strain the tea into cups, distributing evenly to ensure each cup has the same strength. The tea should have a light golden-green color and a distinctive toasty aroma.
  6. Add optional ingredients
    If desired, add a small amount of honey to taste, though traditionally genmaicha is enjoyed without sweeteners. Garnish with a small lemon peel if using.
