  1. Prepare the pork
    Pat the pork tenderloin cubes dry with paper towels. In a bowl, combine salt, pepper, smoked paprika, and dried thyme. Toss the pork cubes in this seasoning mixture until evenly coated.
  2. Sear the pork
    Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork cubes in a single layer, working in batches if necessary to avoid overcrowding. Sear for 2-3 minutes per side until golden brown and just cooked through (145°F internal temperature). Transfer to a plate and set aside.
  3. Make the garlic butter sauce
    In the same skillet, reduce heat to medium-low and add the butter. Once melted, add the minced garlic and cook for 30-45 seconds until fragrant but not browned. Stir in soy sauce, honey, and lemon juice, scraping up any browned bits from the bottom of the pan.
  4. Combine and finish
    Return the pork to the skillet and toss to coat in the garlic butter sauce. Cook for an additional 1-2 minutes until the sauce slightly thickens and coats the pork evenly. Remove from heat and sprinkle with fresh parsley.
  5. Rest and serve
    Let the pork bites rest for 2 minutes before serving to allow the juices to redistribute. Serve hot, spooning any extra garlic butter sauce from the pan over the top.
