  1. Prepare the mushrooms
    Clean the mushrooms by gently wiping them with a damp paper towel or mushroom brush. Remove any tough stems and slice the mushrooms into even pieces, about 1/4 inch thick.
  2. Heat the pan
    Heat a large skillet over medium-high heat. Add the olive oil and wait until it's shimmering but not smoking.
  3. Sauté the mushrooms
    Add the mushrooms to the hot pan in a single layer. Don't overcrowd the pan - work in batches if necessary. Let them cook undisturbed for 3-4 minutes until they begin to brown. Stir and continue cooking for another 2-3 minutes until golden brown.
  4. Add garlic and butter
    Reduce heat to medium. Add the butter to the pan and let it melt. Add the minced garlic and cook for 1-2 minutes until fragrant, stirring frequently to prevent the garlic from burning.
  5. Season and deglaze
    Add the fresh thyme, salt, pepper, and red pepper flakes (if using). If using white wine, add it now and scrape up any browned bits from the bottom of the pan. Let the wine reduce for about 1 minute.
  6. Finish and serve
    Remove the pan from heat. Stir in the fresh lemon juice and sprinkle with chopped parsley. Taste and adjust seasoning if needed. Serve immediately as a side dish or over toasted bread.
