  1. Prepare the whipped cream
    In a large mixing bowl, combine heavy whipping cream, sugar, and vanilla extract. Using an electric mixer, whip until stiff peaks form (about 3-4 minutes). The cream should be firm enough to hold its shape but still spreadable.
  2. Prepare the fruits
    Wash all fruits thoroughly. Hull and slice strawberries, peel and slice kiwi and mango, segment the orange, and set aside blueberries. Make sure all fruit pieces are roughly the same thickness for even sandwiches. Pat dry with paper towels to remove excess moisture.
  3. Assemble the sandwiches
    Lay out 4 slices of crustless white bread. Spread a thick layer (about ½ inch) of whipped cream evenly on each slice. Arrange fruit pieces decoratively on top of the cream, pressing them slightly into the cream. Drizzle with honey if using.
  4. Complete the sandwiches
    Spread another layer of whipped cream on the remaining 4 slices of bread, and carefully place them cream-side down on top of the fruit-topped slices. Press gently to secure.
  5. Wrap and chill
    Wrap each sandwich tightly in plastic wrap. Refrigerate for at least 30 minutes (or up to 2 hours) to allow the cream to set and the bread to soften slightly.
  6. Slice and serve
    Remove plastic wrap and use a sharp knife to cut each sandwich into halves or quarters, wiping the knife clean between cuts for neat edges. For best presentation, cut to reveal the colorful fruit cross-section.
