  1. Prepare the base
    In a shaker, tall glass, or frappe mixer, combine the instant coffee, sugar, and 2 tablespoons of cold water. Make sure the container has enough room for the mixture to expand.
  2. Create the foam
    Shake vigorously for about 30-60 seconds, or use a handheld milk frother to blend until the mixture becomes light brown and very frothy with a thick foam on top. The foam should be thick enough that a spoon could almost stand up in it.
  3. Assemble the drink
    Fill a tall glass with ice cubes. Slowly pour the coffee foam over the ice, being careful to maintain the foam's structure. Add the remaining cold water to fill the glass, leaving room for milk if using.
  4. Add final touches
    If desired, add milk or cream to taste. Do not stir, as traditional frappe is enjoyed by drinking the cold coffee through the foam layer. Garnish with a cinnamon stick and/or lemon slice if desired. Serve with a straw.
