  1. Prepare the oven and pan
    Preheat your oven to 425°F (220°C). Place a 9x13 inch baking dish in the oven with the 4 tablespoons of butter to melt while the oven preheats.
  2. Mix the wet ingredients
    In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt until well combined and slightly frothy.
  3. Add the dry ingredients
    Gradually add the flour to the wet mixture, whisking continuously to prevent lumps from forming. Continue whisking until you have a smooth, thin batter. Stir in the lemon zest if using.
  4. Pour and bake
    Carefully remove the hot baking dish from the oven. The butter should be completely melted and bubbling. Swirl the butter to coat the bottom and sides of the dish. Immediately pour the batter into the hot buttered dish.
  5. Bake until golden
    Return the dish to the oven and bake for 25-30 minutes, or until the pannukakku is puffed and golden brown around the edges. The center should be set but still have a slight wobble.
  6. Serve while warm
    Remove from the oven. The pancake will deflate slightly as it cools, which is normal. Dust with powdered sugar and serve warm with fresh berries. Cut into squares or rectangles to serve.
