
Filipino Chicken Afritada
Hearty tomato-based chicken stew with colorful vegetables

Prepare the chickenSeason chicken pieces with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the chicken pieces on all sides, working in batches if necessary, about 5-7 minutes per batch. Remove chicken and set aside.

Sauté aromaticsIn the same pot, add onions and garlic. Sauté until onions are translucent and garlic is fragrant, about 3-4 minutes. Scrape up any browned bits from the bottom of the pot.

Add vegetables and liquidsReturn chicken to the pot. Add potatoes, carrots, tomato sauce, chicken broth, fish sauce, bay leaves, and sugar. Stir well to combine all ingredients. Bring to a boil, then reduce heat to low. Cover and simmer for 25 minutes, or until chicken is cooked through and potatoes are tender.

Incorporate bell peppersAdd the red and green bell peppers to the pot. Continue to simmer for another 5-7 minutes until peppers are slightly tender but still have some crispness.

Finish the dishAdd frozen green peas and cook for an additional 3-5 minutes until peas are heated through. Taste and adjust seasoning with salt and pepper if needed. Remove bay leaves before serving.

ServeServe hot with steamed white rice. Garnish with fresh chopped parsley if desired. The stew should have a rich tomato sauce that's perfect for spooning over rice.
