
Filipino Pork Menudo
A hearty tomato-based stew with pork, liver, and vegetables

Prepare the meatIn a large pot or deep skillet, heat 2 tablespoons of oil over medium-high heat. Add the pork cubes and cook until browned on all sides, about 5-7 minutes. Remove the pork and set aside. In the same pot, add the liver pieces and cook for 2-3 minutes until just browned on the outside but not overcooked. Remove and set aside with the pork.

Sauté the aromaticsAdd the remaining tablespoon of oil to the pot. Sauté the onions until translucent, about 3 minutes. Add the garlic and cook for another minute until fragrant, being careful not to burn it.

Create the baseReturn the browned pork to the pot. Add the tomato sauce, soy sauce, bay leaf, and water or broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the pork is tender, stirring occasionally.

Add the vegetablesOnce the pork is tender, add the potatoes and carrots. Cover and simmer for 10 minutes. Add the bell peppers and raisins, then continue to simmer for another 5 minutes.

Finish the stewReturn the cooked liver to the pot and gently stir to combine. Simmer for an additional 5 minutes. Season with ground black pepper and salt to taste. If the sauce is too thick, you can add a little more water or broth.

Rest and serveRemove from heat and let the menudo rest for about 5-10 minutes before serving. This allows the flavors to meld together. Remove the bay leaf before serving. Serve hot with steamed white rice.
