
Mexican Menudo

Clean and prepare the tripeRinse the tripe thoroughly under cold water. Place in a large pot and cover with water. Bring to a boil, then drain. This process helps remove any impurities and reduces the strong odor. Cut the cleaned tripe into 1-inch pieces.

Prepare the initial brothIn a large stockpot, combine the tripe, cow's foot (if using), quartered onion, whole garlic cloves, and bay leaves. Cover with 4 quarts of water and bring to a boil. Reduce heat to a simmer, cover partially, and cook for about 2-3 hours until the tripe is tender but still has some chew.

Create the chile baseWhen the tripe is nearly tender, heat 2 tablespoons of oil in a separate pan. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the oregano, cumin, and chile powder, stirring constantly to prevent burning. Cook for 1 minute until fragrant.

Combine and finish cookingRemove the quartered onion, whole garlic cloves, and bay leaves from the broth. Add the chile mixture and hominy to the pot with the tripe. Simmer for an additional 30 minutes to allow flavors to meld. Season with salt to taste.

Prepare garnishesWhile the menudo is finishing, prepare the garnishes. Finely dice the onion, chop the cilantro, and cut limes into wedges. Arrange these in separate small bowls to allow diners to garnish according to their preferences.

Serve hotLadle the hot menudo into large bowls. Traditional serving includes placing all garnishes on the table for each person to add according to taste. Serve with warm corn tortillas on the side.
