Prepare the espressoBrew 2 shots of espresso using an espresso machine or moka pot. Let it cool to room temperature or place in the refrigerator for 10 minutes to chill quickly.

Combine ingredientsIn a blender, add the cooled espresso, milk, sugar, vanilla extract, and chocolate syrup (if using). If you want a thicker consistency, add the xanthan gum as well.

Add ice and blendAdd the ice cubes to the blender and blend on high speed until smooth and creamy with no ice chunks remaining, about 30-45 seconds. The mixture should have a thick, slushy consistency.

Serve and garnishPour the frappuccino into two tall glasses. Top with whipped cream, a drizzle of caramel sauce if desired, and a sprinkle of chocolate shavings or cocoa powder. Serve immediately with a straw.

Optional flavor variationsFor a mocha frappuccino, add an extra tablespoon of chocolate syrup. For a caramel version, add an extra tablespoon of caramel sauce to the blender. For a vanilla frappuccino, omit the chocolate and add an extra 1/4 teaspoon of vanilla extract.
