  1. Prepare the dates
    If your dates aren't soft, soak them in warm water for 10 minutes, then drain well. Pat dry with a paper towel to remove excess moisture.
  2. Process the wet ingredients
    In a food processor, combine the dates, almond butter, maple syrup, coconut oil, and vanilla extract. Process until smooth and the dates are fully broken down, stopping to scrape down the sides as needed.
  3. Add dry ingredients
    Add the cocoa powder, protein powder, rolled oats, and chia seeds to the food processor. Pulse until the mixture starts to come together and becomes uniform in texture.
  4. Mix in chunky ingredients
    Transfer the mixture to a large bowl. Add the chopped walnuts, hemp seeds, and shredded coconut. Mix by hand until all ingredients are evenly distributed.
  5. Form the balls
    Using clean hands, take about 1 tablespoon of the mixture and roll between your palms to form a ball. If the mixture is too sticky, refrigerate for 15-20 minutes before rolling.
  6. Coat the balls
    Roll each ball in additional shredded coconut, cocoa powder, or crushed nuts if desired. This step is optional but adds texture and prevents stickiness.
  7. Chill and store
    Place the formed balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Once chilled, transfer to an airtight container and store in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
