  1. Prepare the filling
    In a large bowl, combine ground pork, chopped shrimp, green onions, ginger, soy sauce, sesame oil, white pepper, rice wine, and cornstarch. Mix thoroughly until well combined and slightly sticky.
  2. Add vegetables
    Fold in the Napa cabbage and diced shiitake mushrooms into the meat mixture. Stir well to distribute evenly throughout the filling.
  3. Form the dumplings
    Place about 1 tablespoon of filling in the center of each dumpling wrapper. Wet the edges with water using your finger. Fold and pleat the edges to form the classic dumpling shape. For siu mai, leave the top open in a basket shape.
  4. Prepare steamer
    Line a bamboo steamer with parchment paper or cabbage leaves. Arrange the dumplings in the steamer, leaving about 1 inch between each to prevent sticking.
  5. Steam the dumplings
    Bring water to a boil in a wok or large pot. Place the bamboo steamer over the boiling water, ensuring the water doesn't touch the steamer. Cover and steam for 8-10 minutes until the dumplings are cooked through and translucent.
  6. Prepare dipping sauce
    While the dumplings are steaming, mix equal parts soy sauce and rice vinegar in small bowls. Add a small dash of chili oil for heat if desired.
  7. Serve
    Carefully remove the steamer from the heat. Serve the dim sum immediately while hot, accompanied by the dipping sauce and hot Chinese tea.
