
Date and Nut Ladoo

Prepare the datesEnsure the dates are pitted and soft. If they are too hard, soak them in warm water for 10 minutes, then drain well and pat dry with a paper towel.

Toast the nutsHeat a pan over medium heat and add the chopped almonds, pistachios, cashews, and walnuts. Dry roast them for 3-4 minutes until they become fragrant and slightly golden. Remove from heat and let them cool completely.

Process the datesPlace the pitted dates in a food processor and blend until they form a smooth paste. If needed, add 1-2 tablespoons of warm water to help achieve a smooth consistency.

Mix ingredientsTransfer the date paste to a large bowl. Add the toasted nuts, ghee, cardamom powder, desiccated coconut, sesame seeds, and saffron (if using). Mix thoroughly until all ingredients are well combined.

Form the ladoosTake a small portion of the mixture (about 2 tablespoons) and roll it between your palms to form smooth, round balls. If the mixture is too sticky, lightly grease your palms with ghee.

Garnish and setRoll each ladoo in desiccated coconut or chopped pistachios for decoration if desired. Place them on a tray and refrigerate for 30 minutes to set.
