Prepare the peanut butter mixtureIn a large bowl, mix together the peanut butter, softened butter, vanilla extract, and salt until smooth and well combined. Gradually add the powdered sugar, stirring until fully incorporated. The mixture should be firm enough to roll into balls.

Form the ballsUsing a tablespoon or small cookie scoop, portion out the peanut butter mixture and roll between your palms to form 1-inch balls. Place the balls on a baking sheet lined with parchment paper.

Chill the peanut butter ballsPlace the baking sheet with the peanut butter balls in the refrigerator for at least 30 minutes or until firm. This will make them easier to dip in the chocolate coating.

Prepare the chocolate coatingIn a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each interval, until the chocolate is completely melted and smooth.

Dip the balls in chocolateUsing a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, coating it completely or leaving a small circle of peanut butter visible on top (for traditional Buckeyes). Allow excess chocolate to drip off before returning to the parchment-lined baking sheet.

Add garnishWhile the chocolate is still wet, sprinkle the tops with chopped peanuts if desired. Work quickly as the chocolate will begin to set.

Set the chocolate coatingReturn the chocolate-covered peanut butter balls to the refrigerator for at least 1 hour to allow the chocolate to fully set. For best results, let them chill for 2 hours.
