  1. Prepare the bread
    Cut the Cuban bread rolls in half lengthwise. Spread mustard on the bottom half and mayonnaise on the top half of each roll.
  2. Layer the sandwich
    On the bottom half of each roll, layer 2 slices of ham, followed by 3 oz of sliced roast pork, 2 slices of Swiss cheese, and the pickle slices. Place 4 halved croquettes (2 whole croquettes cut in half) on top of the pickles.
  3. Add finishing touches
    Sprinkle potato sticks over the sandwich ingredients if using. Close the sandwich with the top half of the roll.
  4. Press the sandwich
    Heat a sandwich press or large skillet over medium heat. Lightly butter the outside of the sandwich. If using a sandwich press, cook the sandwich until the bread is crispy and the cheese has melted, about 3-4 minutes. If using a skillet, place the sandwich in the pan and press down with a heavy pot or press. Cook for 2-3 minutes on each side until golden brown and crispy.
  5. Serve
    Remove the sandwich from the heat, cut diagonally, and serve immediately while hot and crispy.
