In another bowl, combine the cornstarch, flour, salt, white pepper, and garlic powder. Dip each piece of chicken first in the beaten eggs, then coat thoroughly in the cornstarch mixture.

Heat the oilIn a large, deep skillet or wok, heat the vegetable oil to 350°F (175°C). Use enough oil to submerge the chicken pieces. Test the oil by dropping in a small piece of the coating mixture - it should sizzle immediately.

Fry the chickenWorking in batches to avoid overcrowding, carefully add the coated chicken pieces to the hot oil. Fry for 4-5 minutes until golden brown and crispy. The internal temperature should reach 165°F (74°C). Transfer to a paper towel-lined plate to drain excess oil.

Prepare the honey sauceIn a small saucepan, combine the honey, soy sauce, minced garlic, rice vinegar, and sesame oil. Bring to a simmer over medium heat, stirring frequently. Cook for about 3-4 minutes until slightly thickened.

Coat the chickenTransfer the fried chicken to a large bowl. Pour the warm honey sauce over the chicken and toss gently until all pieces are evenly coated. Be careful not to soak the chicken too much, as this will make it lose its crispiness.
