Prepare the egg mixtureIn a large shallow bowl, whisk together the eggs, coconut milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and smooth.

Set up dipping stationPlace the shredded coconut in a separate shallow dish. Arrange your workstation with the egg mixture, coconut, and a plate to hold the prepared slices.

Dip and coat the breadDip each slice of brioche bread into the egg mixture, allowing it to soak for about 20-30 seconds on each side. Then press each soaked slice into the shredded coconut, coating both sides thoroughly and pressing gently to adhere.

Heat the cooking surfaceHeat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and allow it to melt completely, coating the cooking surface.

Cook the French toastCook the coconut-crusted bread slices for 3-4 minutes on each side, until golden brown and crispy on the outside and cooked through in the center. Add more butter to the pan between batches as needed. Work in batches to avoid overcrowding the pan.

Keep warmTransfer cooked slices to a wire rack set over a baking sheet in a 200°F (95°C) oven to keep warm while cooking the remaining slices.
