  1. Prepare the marinade
    In a small bowl, whisk together olive oil, lemon zest, lemon juice, orange zest, orange juice, minced garlic, honey, and Dijon mustard until well combined. Stir in 1 tablespoon each of the chopped dill and parsley, all the thyme leaves, salt, and pepper.
  2. Marinate the salmon
    Place the salmon fillets in a shallow dish, skin side down. Pour the marinade over the salmon, ensuring the tops are well coated. Cover and refrigerate for 15-30 minutes (no longer, as the citrus will begin to cook the fish).
  3. Preheat the grill
    Preheat your grill to medium-high heat (about 375-400°F). Oil the grates well to prevent sticking. Alternatively, preheat a grill pan over medium-high heat on your stovetop.
  4. Grill the salmon
    Remove salmon from the marinade, gently shaking off excess. Place the fillets on the grill, skin side down. Close the lid and grill for 4-5 minutes until the skin is crispy. Carefully flip the fillets and grill for another 3-4 minutes until the salmon is cooked to your liking (internal temperature of 125°F for medium-rare or 130°F for medium).
  5. Rest and garnish
    Transfer the salmon to a platter and let rest for 3 minutes. Sprinkle with the remaining fresh herbs. Serve immediately with lemon and orange wedges on the side for additional flavor.
