  1. Prepare the rice
    In a medium saucepan, heat the olive oil or butter over medium heat. Add the garlic and sauté for 30 seconds until fragrant. Add the rinsed rice and cumin, stirring frequently until the rice begins to turn lightly golden, about 2-3 minutes.
  2. Cook the rice
    Pour in the broth and salt, bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until all liquid is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes.
  3. Add lime and cilantro
    Fluff the rice with a fork. Add the lime zest, lime juice, and chopped cilantro. If using, add the diced jalapeño. Gently fold all ingredients together until well combined.
  4. Adjust seasoning
    Taste and adjust seasonings as needed, adding more salt, lime juice, or cilantro according to your preference. The rice should have a bright, zesty flavor with a fresh herbal note.
  5. Serve and garnish
    Transfer to a serving bowl and garnish with additional cilantro leaves and lime wedges. Serve immediately as a side dish for Mexican, Latin American, or Tex-Mex cuisines.
