Instructions

  1. Prepare the aromatics
Heat olive oil in a large saucepan or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the garlic and cook for another 30 seconds until fragrant.
  2. Toast the rice and orzo
Add the rice and orzo to the pan and stir constantly for 2-3 minutes until the orzo begins to turn golden brown and the rice becomes slightly translucent around the edges. This toasting process adds depth of flavor to the pilaf.
  3. Add liquids and seasonings
Pour in the broth, lemon juice, salt, and pepper. Stir well and bring the mixture to a boil. Once boiling, reduce the heat to low, cover with a tight-fitting lid, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  4. Rest the rice
Remove the pan from heat and let it stand, covered, for 5 minutes. This resting period allows the rice to continue steaming and results in a fluffier texture.
  5. Add finishing touches
Uncover the rice and fluff gently with a fork. Fold in the lemon zest, chopped herbs, and toasted nuts. Taste and adjust seasonings if necessary.
  6. Serve and garnish
Transfer the pilaf to a serving bowl. For an elegant presentation, reserve some of the fresh herbs and toasted nuts to sprinkle on top just before serving.
