
Chocolate Zucchini Bread

Prepare the zucchiniWash and trim the ends off the zucchini. Grate using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel and squeeze to remove excess moisture. You should have about 2 cups after squeezing.

Preheat and preparePreheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter and line with parchment paper, leaving an overhang on the sides for easy removal.

Mix dry ingredientsIn a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined and no lumps remain.

Mix wet ingredientsIn a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

Combine mixturesFold the dry ingredients into the wet ingredients using a rubber spatula, mixing just until combined (do not overmix). Fold in the grated zucchini and ¾ cup of the chocolate chips until evenly distributed.

Bake the breadPour the batter into the prepared loaf pan and spread evenly. Sprinkle the remaining ¼ cup chocolate chips on top. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.

Cool and serveAllow the bread to cool in the pan for 15 minutes, then use the parchment paper overhang to lift it out onto a wire rack to cool completely before slicing. For best results, wait at least 1 hour before cutting.
