
Chinese Dan Dan Noodles
Spicy Sichuan noodles with aromatic pork and sesame sauce

Prepare the sauceIn a medium bowl, combine the sesame paste, light soy sauce, dark soy sauce, black vinegar, 2 tablespoons of chili oil, half of the ground Sichuan peppercorns, minced garlic, sugar, and 2 tablespoons of water. Whisk until smooth and set aside.

Cook the porkHeat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the white parts of the green onions and minced ginger, stir-frying for 30 seconds until fragrant. Add the ground pork and cook, breaking it up with a spatula, until browned and crispy, about 5-6 minutes.

Season the meatOnce the pork is browned, add 1 tablespoon of light soy sauce and the remaining Sichuan peppercorns. Continue cooking for another minute until the liquid is absorbed and the meat is well seasoned. Remove from heat and set aside.

Cook the noodlesBring a large pot of water to a boil. Cook the noodles according to package instructions until al dente, usually 3-5 minutes for fresh noodles or 8-10 minutes for dried. Drain well and rinse briefly with cold water to stop the cooking process.

Assemble the dishDivide the sauce among four serving bowls. Add the hot noodles on top and toss well to coat with the sauce. Top each bowl with a portion of the cooked pork mixture.

Garnish and serveGarnish each bowl with the green parts of the scallions, chopped peanuts, and cilantro. Drizzle with additional chili oil if desired. Serve immediately while hot.
