  1. Prepare the pork
    Rinse the pork ribs or bones under cold water. Place in a pot of cold water and bring to a boil for 2-3 minutes to remove impurities. Drain and rinse the pork again under cold running water.
  2. Create the soup base
    In a large pot, heat the vegetable oil over medium heat. Add ginger and garlic, stir-frying for about 30 seconds until fragrant. Add the blanched pork pieces and stir-fry for another minute.
  3. Add liquids and seasonings
    Pour in the water or chicken stock, Chinese cooking wine, and add the white parts of green onions. Bring to a boil, then reduce to a simmer. Cover and cook for 30 minutes to extract flavor from the pork.
  4. Cook the daikon
    Add the daikon chunks to the simmering broth. Return to a gentle boil, then reduce heat to maintain a simmer. Cover and cook for an additional 30-45 minutes until the daikon is very tender and translucent.
  5. Season and finish
    Season the soup with salt and white pepper to taste. Add the sesame oil and stir gently. Simmer for another 5 minutes to allow the flavors to meld.
  6. Serve
    Remove the whole green onion whites (if desired). Ladle the hot soup into bowls, ensuring each serving has plenty of daikon and some pork. Garnish with the chopped green onion tops and optional cilantro leaves.
