
Chicken Menudo
Filipino stew with chicken, vegetables, and savory tomato sauce

Prepare the chickenIn a large bowl, marinate the chicken pieces with soy sauce for about 15 minutes. While marinating, prepare and chop all vegetables to ensure they're ready for cooking.

Sauté the aromaticsHeat vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until the onions are translucent and garlic is fragrant, about 3 minutes.

Brown the chicken and liverAdd the marinated chicken pieces to the pot and cook until lightly browned on all sides, about 5-7 minutes. Add the chicken liver and cook for another 3 minutes, stirring occasionally.

Add the vegetablesStir in the potatoes, carrots, and bell pepper. Cook for about 5 minutes, stirring occasionally to ensure even cooking and to prevent sticking to the bottom of the pot.

Add the sauce componentsPour in the tomato sauce, tomato paste, chicken broth, remaining soy sauce, fish sauce, and add bay leaves. Stir well to combine. Bring the mixture to a boil, then reduce heat to low.

Simmer until tenderCover the pot and simmer for about 25-30 minutes, or until the chicken and vegetables are tender. Stir occasionally to prevent sticking and ensure even cooking.

Add the peasAdd the green peas during the last 5 minutes of cooking. Stir gently to incorporate and cook just until the peas are heated through but still bright green.

Serve the menudoRemove bay leaves, taste and adjust seasoning if necessary. Serve hot with steamed white rice. Garnish with chopped fresh parsley or cilantro if desired.
