  1. Prepare the béchamel base
    In a medium saucepan over medium heat, melt the butter. Add the flour and whisk continuously for 2-3 minutes until it forms a smooth paste (roux) but doesn't brown. Gradually whisk in the warm milk, ensuring no lumps form. Cook for 5-7 minutes, stirring constantly, until the mixture thickens to a smooth, creamy consistency.
  2. Add the cheese
    Remove the saucepan from heat. Add the grated Gruyère and Parmesan cheeses, stirring until completely melted and incorporated. Season with salt, pepper, and nutmeg. Taste and adjust seasoning if needed.
  3. Cool and shape the mixture
    Transfer the cheese mixture to a shallow dish and let it cool completely in the refrigerator for at least 2 hours or overnight. Once chilled and firm, use a tablespoon to scoop portions of the mixture. With lightly oiled hands, shape each portion into a cylinder about 2 inches long and 1 inch in diameter.
  4. Bread the croquettes
    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with chopped parsley. Roll each croquette first in flour, then dip in egg, and finally coat thoroughly with breadcrumbs. Place the breaded croquettes on a baking sheet and refrigerate for 30 minutes to firm up.
  5. Heat the oil
    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a cooking thermometer to ensure the oil maintains the correct temperature throughout frying.
  6. Fry the croquettes
    Carefully lower 4-5 croquettes into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes, turning occasionally, until golden brown and crispy on all sides. Remove with a slotted spoon and drain on paper towels. Repeat with remaining croquettes.
  7. Serve
    Transfer the croquettes to a serving platter while still warm. Garnish with additional chopped parsley if desired and serve immediately for the best taste and texture. These are delicious on their own or with a dipping sauce like garlic aioli or spicy tomato sauce.
