Gradually whisk in the warm milk, ensuring no lumps form. Cook for 5-7 minutes, stirring constantly, until the mixture thickens to a smooth, creamy consistency.

Add the cheeseRemove the saucepan from heat. Add the grated Gruyère and Parmesan cheeses, stirring until completely melted and incorporated. Season with salt, pepper, and nutmeg. Taste and adjust seasoning if needed.

Cool and shape the mixtureTransfer the cheese mixture to a shallow dish and let it cool completely in the refrigerator for at least 2 hours or overnight. Once chilled and firm, use a tablespoon to scoop portions of the mixture. With lightly oiled hands, shape each portion into a cylinder about 2 inches long and 1 inch in diameter.

Bread the croquettesSet up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with chopped parsley. Roll each croquette first in flour, then dip in egg, and finally coat thoroughly with breadcrumbs. Place the breaded croquettes on a baking sheet and refrigerate for 30 minutes to firm up.

Heat the oilIn a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a cooking thermometer to ensure the oil maintains the correct temperature throughout frying.
