  1. Prepare the cod
    Bring a large pot of water to a simmer. Add the soaked and drained salt cod and simmer gently for 15 minutes until the fish flakes easily. Remove from water, drain well, and let cool. Once cooled, flake the fish with your fingers, removing any bones or skin, and set aside.
  2. Cook the potatoes
    In a separate pot, boil the potato chunks in salted water until fork-tender, about 15 minutes. Drain well and mash until smooth with no lumps. Allow to cool slightly.
  3. Prepare the base mixture
    In a skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and let cool slightly.
  4. Mix the ingredients
    In a large bowl, combine the flaked cod, mashed potatoes, and the sautéed onion-garlic mixture. Add the beaten eggs, chopped parsley, black pepper, and paprika. Mix thoroughly until well combined. Cover the bowl and refrigerate for at least 30 minutes to firm up the mixture.
  5. Shape the croquettes
    With damp hands, take about 2 tablespoons of the mixture and form into a cylinder or oval shape about 3 inches long. Place the shaped croquettes on a baking sheet lined with parchment paper. Continue until all the mixture is used.
  6. Coat the croquettes
    Place the flour in a shallow dish. Gently roll each croquette in the flour, ensuring they are lightly but completely coated. Shake off any excess flour and return to the baking sheet.
  7. Fry the croquettes
    Heat about 1 inch of olive oil in a deep skillet or frying pan to 350°F (175°C). Working in batches to avoid overcrowding, fry the croquettes until golden brown on all sides, about 3-4 minutes total. Transfer to a plate lined with paper towels to drain excess oil.
  8. Serve
    Arrange the croquettes on a serving platter, garnish with chopped chives, and serve immediately with lemon wedges on the side. These are best enjoyed hot while the exterior is crispy and the interior is soft and creamy.
