  1. Prepare the marinade
    In a large bowl, combine hoisin sauce, honey, Shaoxing wine, soy sauce, oyster sauce, five-spice powder, brown sugar, minced garlic, fermented red bean curd (if using), sesame oil, white pepper, and red food coloring (if using). Mix thoroughly until all ingredients are well incorporated.
  2. Marinate the pork
    Add the pork strips to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, turning the meat occasionally for even marination.
  3. Prepare for roasting
    Preheat your oven to 375°F (190°C). Line a baking tray with foil and place a wire rack on top. Remove the pork from the marinade, reserving the liquid. Place the pork strips on the rack, ensuring they don't touch.
  4. Roast the pork
    Roast the pork for 25 minutes, then flip each piece over. Transfer the reserved marinade to a small saucepan and bring to a boil for 2 minutes to create a basting sauce.
  5. Glaze and finish
    Brush the pork with the reduced marinade and additional honey. Return to the oven for another 20-25 minutes, basting every 8-10 minutes until the pork is caramelized and reaches an internal temperature of 145°F (63°C).
  6. Rest and slice
    Allow the char siu to rest for 10 minutes before slicing. This helps retain the juices and makes for cleaner slices. Cut into thin slices across the grain for the most tender texture.
