  1. Prepare the boiling liquid
    Fill a large stockpot about 2/3 full with water. Squeeze the juice from the lemons into the water and add the rinds. Add the garlic, bay leaves, Cajun seasoning, cayenne pepper, and hot sauce. Bring to a rolling boil over high heat.
  2. Cook the potatoes
    Once the water is boiling, add the potatoes and onion quarters. Cook for about 10 minutes or until the potatoes begin to soften but are not fully cooked.
  3. Add corn and sausage
    Add the corn and smoked sausage to the pot. Continue boiling for another 5 minutes, allowing the flavors to meld and the corn to start cooking.
  4. Cook the shrimp
    Add the shrimp to the pot last as they cook quickly. Stir gently and cook for 2-3 minutes until the shrimp turn pink and opaque. Be careful not to overcook them.
  5. Drain and serve
    Turn off the heat and drain the mixture using a large colander. For a traditional presentation, spread newspaper or parchment paper over a large table and pour the seafood boil directly onto it, or serve in large bowls.
  6. Prepare the butter sauce
    Mix the melted butter with a few dashes of hot sauce and a sprinkle of additional Cajun seasoning. Serve alongside the seafood boil for dipping.
