
Breakfast Avocado Toast with Bacon
Creamy avocado with crispy bacon on artisanal toast

Cook the baconIn a large skillet over medium heat, cook the bacon strips until crispy, about 6-8 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain excess grease. Once cooled, break or cut into pieces.

Prepare the avocado spreadCut the avocados in half, remove pits, and scoop the flesh into a medium bowl. Add lemon juice, salt, and pepper. Mash with a fork until mostly smooth but still slightly chunky. Taste and adjust seasoning if needed.

Toast the breadBrush both sides of each bread slice lightly with olive oil. Toast in a toaster, in the same skillet used for bacon (wiped clean), or under a broiler until golden brown and crispy on the edges, about 2-3 minutes per side.

Fry the eggsIn a non-stick skillet over medium heat, add 1 tablespoon of olive oil. Once hot, crack the eggs into the pan and cook until the whites are set but yolks are still runny, about 3-4 minutes. Season with a pinch of salt and pepper.

Assemble the toastSpread the mashed avocado evenly over each slice of toasted bread. Top each with bacon pieces, dividing equally. Carefully place a fried egg on top of each slice. Sprinkle with red pepper flakes if using.

Garnish and serveGarnish with fresh chives or microgreens and radish slices if using. Serve immediately while the toast is still warm and the egg yolk is runny.
