Spicy Indian-inspired pizza with cumin-scented potatoes

Prepare the doughPreheat your oven to 220°C (425°F). If using a pizza stone, place it in the oven while preheating. On a floured surface, roll out the pizza dough to a 12-inch circle or rectangle, depending on your preference and baking tray.

Make the Bombay potato toppingHeat olive oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add the diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and ginger paste, cooking for another minute until fragrant.

Season the potatoesAdd the diced boiled potatoes to the pan. Sprinkle with turmeric, garam masala, and chili powder. Gently mix everything together, being careful not to mash the potatoes. Cook for 3-4 minutes until the potatoes are well-coated with the spices and lightly golden. Remove from heat and let cool slightly.

Assemble the pizzaBrush the rolled-out dough with olive oil. Spread two-thirds of the mozzarella cheese evenly over the dough, leaving a small border for the crust. Distribute the spiced potato mixture evenly over the cheese. Sprinkle the remaining mozzarella and crumbled paneer (if using) on top.

Bake the pizzaTransfer the pizza to the preheated oven (on a pizza stone or baking tray). Bake for 15-20 minutes until the crust is golden brown and the cheese is bubbly and slightly browned.

Garnish and serveRemove the pizza from the oven and let it cool for a few minutes. Garnish with fresh coriander leaves and sliced green chili if desired. Slice and serve immediately while hot.
