  1. Prepare the aromatics
    Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, stirring frequently for 1-2 minutes until fragrant but not browned.
  2. Sauté the mushrooms
    Add the shiitake and cremini mushrooms to the pot. Cook for 5-7 minutes, stirring occasionally, until the mushrooms have released their moisture and begun to brown slightly.
  3. Add the broth and bok choy stems
    Pour in the vegetable or chicken broth and soy sauce. Bring to a simmer. Add the chopped bok choy stems (the white parts) and simmer for 5 minutes until they begin to soften.
  4. Add the bok choy leaves
    Add the bok choy leaves to the pot and simmer for another 2-3 minutes until the leaves are wilted but still bright green. Stir in the rice vinegar.
  5. Finish and serve
    Remove from heat. Taste and adjust seasoning if needed. Ladle the soup into bowls and garnish with sliced green onions, toasted sesame seeds, and a drizzle of chili oil if desired.
