
Black Bean Tostadas
Crispy corn tortillas topped with spicy black beans and fresh toppings

Prepare the tortillasPreheat the oven to 400°F (200°C). Lightly brush both sides of each tortilla with vegetable oil. Place the tortillas in a single layer on baking sheets and bake for 5-7 minutes, flipping halfway through, until crisp and golden. Set aside.

Make the black bean mixtureHeat 2 tablespoons of oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add garlic and jalapeño, and cook for another minute until fragrant.

Season and mash the beansAdd the drained black beans, cumin, chili powder, and salt to the skillet. Pour in the water or broth and bring to a simmer. Using a potato masher or the back of a wooden spoon, partially mash the beans, leaving some whole for texture. Cook for 5 minutes, stirring occasionally, until the mixture thickens.

Prepare the toppingsWhile the beans are cooking, prepare all the toppings. Shred the lettuce, dice the tomatoes, crumble the cheese, slice the avocado, and chop the cilantro. Arrange all toppings in separate bowls for serving.

Assemble the tostadasSpread about 1/4 cup of the black bean mixture on each crispy tortilla. Top with shredded lettuce, diced tomatoes, crumbled cheese, avocado slices, and a sprinkle of fresh cilantro.

Serve immediatelyFor the best texture and flavor, serve the tostadas immediately after assembling. Provide lime wedges and hot sauce on the side for guests to add according to their preference.
