  1. Prepare the ingredients
    Measure out all ingredients and have them ready. If using saffron, soak a few strands in 1 tablespoon of warm milk to release color and flavor.
  2. Roast the besan
    Heat ghee in a heavy-bottomed pan over medium heat. Add the chickpea flour (besan) and stir continuously to prevent burning. Roast for about 10-12 minutes until it turns golden brown and gives off a nutty aroma. The mixture will become thick and pasty.
  3. Prepare sugar syrup
    While roasting the besan, heat water in a separate saucepan. Add sugar and stir until completely dissolved. Keep the sugar syrup warm.
  4. Combine and cook
    Carefully pour the warm sugar syrup into the roasted besan, stirring continuously to prevent lumps. The mixture will splutter, so be cautious. Continue cooking on low heat for about 10-15 minutes, stirring occasionally until the mixture thickens and starts leaving the sides of the pan.
  5. Add flavorings and nuts
    Add cardamom powder, saffron (if using), and nutmeg (if using). Mix well. Add half of the sliced almonds, pistachios, and raisins and stir to incorporate them evenly throughout the halwa.
  6. Final touches
    Pour the halwa into a greased serving dish. Garnish with the remaining nuts and raisins. Allow it to cool slightly before serving.
