  1. Prepare the beef
    In a large pot, bring water to a boil. Add beef chunks and boil for 5 minutes. Drain and rinse the beef to remove impurities. This step will ensure a clearer broth.
  2. Start the broth
    Return the beef to the pot and add 10 cups of fresh water. Add quartered onion, crushed garlic, whole peppercorns, and star anise (if using). Bring to a boil, then reduce heat to low. Simmer covered for about 1.5-2 hours or until beef is tender.
  3. Add root vegetables
    When beef is almost tender, add potatoes, carrots, and corn. Continue to simmer for 10-15 minutes until vegetables start to soften. Season with fish sauce and salt to taste.
  4. Add remaining vegetables
    Add cabbage wedges and continue cooking for another 5 minutes. Finally, add the bok choy or pechay and cook for 1-2 minutes until just wilted but still bright green.
  5. Serve hot
    Remove from heat. Ladle soup, meat, and vegetables into bowls. Serve hot with steamed rice on the side and additional fish sauce for dipping the meat if desired.
