  1. Prepare the marinade
    In a medium bowl, combine the vegetable oil, red wine vinegar, minced garlic, cumin, paprika, oregano, black pepper, salt, and aji panca paste. Whisk until well combined to form a smooth marinade.
  2. Marinate the beef heart
    Add the cubed beef heart to the marinade and toss to coat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, turning occasionally to ensure even marination.
  3. Prepare the skewers
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated beef heart pieces alternately with red onion and bell pepper chunks onto the skewers, leaving a small space between each piece to ensure even cooking.
  4. Preheat the grill
    Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  5. Grill the skewers
    Place the skewers on the hot grill and cook for 2-3 minutes per side, turning occasionally, until the beef heart is medium-rare to medium (about 8-10 minutes total). Beef heart should be cooked to medium at most, as it can become tough if overcooked.
  6. Rest and serve
    Remove the skewers from the grill and let them rest for 5 minutes. Serve hot with a side of green sauce (aji verde) or chimichurri, lime wedges, and grilled corn or rice if desired.
