  1. Prepare the tongue
    Rinse the beef tongue thoroughly under cold water. Place it in a large pot and cover with water. Add the quartered onion, garlic cloves, bay leaves, salt, and peppercorns.
  2. Simmer the tongue
    Bring the water to a boil, then reduce heat to low. Cover and simmer for approximately 3 hours, or until the tongue is very tender when pierced with a fork. Add more water during cooking if needed to keep the tongue covered.
  3. Peel and dice
    Remove the tongue from the pot and let it cool until you can handle it. While still warm, peel the outer skin (it should come off easily). Dice the tongue into small 1/2-inch cubes.
  4. Sear the meat
    Heat vegetable oil in a large skillet over medium-high heat. Add the diced tongue and sear until the edges are crispy and golden brown, about 5-7 minutes. Season with additional salt if desired.
  5. Warm the tortillas
    Heat the corn tortillas on a dry skillet or directly over a gas flame until soft and pliable, about 30 seconds per side. Keep warm by wrapping them in a clean kitchen towel.
  6. Assemble the tacos
    Place about 2 tablespoons of the diced tongue on each tortilla. Top with diced onion and chopped cilantro. Serve with lime wedges and salsa verde on the side.
