  1. Prepare the sauce
    In a large bowl, combine dashi stock, soy sauce, mirin, sake, sugar, and grated ginger. Stir until sugar is completely dissolved.
  2. Cook the onions
    Heat a large skillet or pot over medium heat. Add sliced onions and the white parts of green onions. Pour half of the sauce mixture over them. Simmer for about 5-7 minutes until onions are soft and translucent.
  3. Add the beef
    Spread the thinly sliced beef over the onions. Pour the remaining sauce over the beef. Reduce heat to low, cover, and simmer for about 10-12 minutes until beef is tender and cooked through. Stir occasionally to ensure even cooking.
  4. Prepare optional eggs
    If using eggs, prepare them to your preference. Traditional gyudon often includes a raw egg yolk or poached egg on top. To poach eggs, bring a pot of water to a gentle simmer, add a splash of vinegar, and carefully crack eggs into the water. Cook for 3-4 minutes until whites are set but yolks remain runny.
  5. Serve the gyudon
    Divide the cooked rice among 4 bowls. Top each bowl with the beef and onion mixture, spooning some of the sauce over the meat. Garnish with the green parts of the sliced green onions and pickled ginger. If using, place a poached egg on top of each bowl.
  6. Final touches
    Serve immediately while hot. Traditional condiments like shichimi togarashi (Japanese seven-spice) can be offered on the side for those who prefer a bit of spice.
