  1. Prepare the sauce
    In a bowl, combine soy sauce, mirin, sake, sugar, and dashi stock. Stir until sugar is dissolved and set aside.
  2. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add the sliced onions and cook until they become translucent and slightly caramelized, about 5-7 minutes.
  3. Add the beef
    Add the thinly sliced beef to the skillet with the onions. Cook for about 2-3 minutes until the beef is no longer pink.
  4. Simmer with sauce
    Pour the prepared sauce mixture over the beef and onions. Add the grated ginger and stir well. Bring to a simmer and reduce heat to low. Cook for about 10-15 minutes until the sauce has reduced and thickened slightly.
  5. Prepare eggs (optional)
    If using eggs, prepare them according to your preference. For a traditional serving, you can poach or fry the eggs until the whites are set but the yolks remain runny.
  6. Assemble the donburi
    Divide the hot cooked rice among four deep bowls. Top each bowl with the beef and onion mixture, making sure to include some of the savory sauce. Place a cooked egg on top if using.
  7. Garnish and serve
    Sprinkle chopped green onions over each bowl. Serve immediately while hot, allowing diners to break the egg and mix it with the rice and beef for added richness.
