  1. Prepare the beef
    Rinse the beef shanks and short ribs under cold water. In a large pot, add vegetable oil and sear the beef pieces on all sides until lightly browned, about 3-4 minutes per side. This will help enhance the flavor of the broth.
  2. Make the broth
    Add water, onion, garlic, fish sauce, and peppercorns to the pot with the seared beef. Bring to a boil, then reduce heat to low. Simmer for 2-3 hours or until the beef becomes tender, skimming off any scum that rises to the surface.
  3. Add hearty vegetables
    When beef is tender, add corn and potatoes to the pot. Continue simmering for another 20-30 minutes until the potatoes are fork-tender. The corn adds a sweet contrast to the savory broth.
  4. Finish with leafy vegetables
    Add the cabbage and string beans and cook for another 5 minutes. Finally, add the bok choy or pechay and cook for 1-2 minutes until just wilted. Season with additional salt if needed.
  5. Serve hot
    Carefully transfer beef shanks, bone marrow, vegetables, and broth into serving bowls. Ensure each serving has a piece of beef with bone marrow. Serve immediately with steamed rice and a small dish of fish sauce with calamansi or lime as a dipping sauce on the side.
