Beef Bulalo
Hearty Filipino bone marrow soup with tender beef and vegetables
Ingredients
Instructions
-
Prepare the beefRinse the beef shanks and short ribs under cold water. In a large pot, add vegetable oil and sear the beef pieces on all sides until lightly browned, about 3-4 minutes per side. This will help enhance the flavor of the broth.
-
Make the brothAdd water, onion, garlic, fish sauce, and peppercorns to the pot with the seared beef. Bring to a boil, then reduce heat to low. Simmer for 2-3 hours or until the beef becomes tender, skimming off any scum that rises to the surface.
-
Add hearty vegetablesWhen beef is tender, add corn and potatoes to the pot. Continue simmering for another 20-30 minutes until the potatoes are fork-tender. The corn adds a sweet contrast to the savory broth.
-
Finish with leafy vegetablesAdd the cabbage and string beans and cook for another 5 minutes. Finally, add the bok choy or pechay and cook for 1-2 minutes until just wilted. Season with additional salt if needed.
-
Serve hotCarefully transfer beef shanks, bone marrow, vegetables, and broth into serving bowls. Ensure each serving has a piece of beef with bone marrow. Serve immediately with steamed rice and a small dish of fish sauce with calamansi or lime as a dipping sauce on the side.
