
Beef and Egg Congee
Comforting rice porridge with tender beef and silky eggs

Marinate the beefIn a medium bowl, combine the beef slices with 1 tablespoon soy sauce, oyster sauce, and sesame oil. Mix well to coat the meat evenly. Cover and refrigerate for at least 15 minutes while preparing the congee.

Prepare the congee baseIn a large pot, add the rinsed rice and broth. Bring to a boil over high heat, then reduce to a simmer. Stir occasionally to prevent the rice from sticking to the bottom. Simmer uncovered for about 1 hour, or until the rice breaks down and the mixture becomes thick and creamy.

Add aromaticsWhen the congee has reached the desired consistency, add the grated ginger, minced garlic, remaining soy sauce, and white pepper. Stir well and simmer for another 5 minutes to allow the flavors to meld.

Cook the beefAdd the marinated beef slices to the congee, stirring gently. The thin slices will cook quickly in the hot congee, about 2-3 minutes. Make sure not to overcook the beef to keep it tender.

Add the eggsCrack the eggs directly into the congee, spacing them evenly. Cover the pot and simmer for 3-4 minutes for soft eggs, or longer if you prefer firmer yolks. You can also beat the eggs and stir them in slowly for a silkier texture.

Final seasoningTaste the congee and adjust the seasoning with salt if needed. The congee should be savory with a hint of ginger and garlic.

Serve and garnishLadle the hot congee into bowls. Garnish with sliced green onions and chopped cilantro. Serve immediately with additional soy sauce or chili oil on the side if desired.
