  1. Prepare the filling
    In a medium bowl, mix the pulled pork with BBQ sauce until well coated. Microwave for 1-2 minutes or warm in a skillet until heated through. Set aside.
  2. Assemble the quesadillas
    Lay out 4 tortillas on a clean work surface. Distribute the BBQ pulled pork evenly among them, followed by red onion slices, diced jalapeño (if using), and chopped cilantro. Sprinkle each with 1/2 cup of cheese, then top with the remaining 4 tortillas.
  3. Cook the quesadillas
    Heat 1/2 tablespoon of oil in a large skillet over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes per side until golden brown and crispy, and the cheese has melted. Repeat with the remaining quesadillas, adding more oil as needed.
  4. Slice and serve
    Transfer the cooked quesadillas to a cutting board and let rest for 1 minute. Using a sharp knife or pizza cutter, slice each quesadilla into quarters. Serve immediately with coleslaw, sour cream, and additional BBQ sauce on the side.
