Prepare the fillingIn a medium bowl, mix the pulled pork with BBQ sauce until well coated. Microwave for 1-2 minutes or warm in a skillet until heated through. Set aside.

Assemble the quesadillasLay out 4 tortillas on a clean work surface. Distribute the BBQ pulled pork evenly among them, followed by red onion slices, diced jalapeño (if using), and chopped cilantro. Sprinkle each with 1/2 cup of cheese, then top with the remaining 4 tortillas.

Cook the quesadillasHeat 1/2 tablespoon of oil in a large skillet over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes per side until golden brown and crispy, and the cheese has melted. Repeat with the remaining quesadillas, adding more oil as needed.

Slice and serveTransfer the cooked quesadillas to a cutting board and let rest for 1 minute. Using a sharp knife or pizza cutter, slice each quesadilla into quarters. Serve immediately with coleslaw, sour cream, and additional BBQ sauce on the side.
