  1. Prepare the brisket
    In a small bowl, mix the chopped or sliced brisket with barbecue sauce. If the brisket is cold from the refrigerator, microwave for 30 seconds to warm it slightly, which will help the cheese melt better later.
  2. Caramelize the onions
    Heat olive oil in a small skillet over medium heat. Add the sliced red onions with brown sugar and a pinch of salt. Cook for 5-7 minutes, stirring occasionally, until onions are soft and lightly caramelized. Remove from heat and set aside.
  3. Prepare the cheese mixture
    In a medium bowl, combine the grated cheddar and smoked gouda cheeses with the smoked paprika. Mix thoroughly to distribute the flavors evenly.
  4. Assemble the sandwiches
    Lay out the 8 slices of sourdough bread on a clean work surface. Spread the outside of each slice with butter (or mayonnaise if using for extra crispiness). Flip the bread over and distribute the cheese mixture evenly on 4 slices. Top the cheese with the brisket mixture, dividing it equally, then add a layer of caramelized onions. Place the remaining bread slices on top, buttered side facing outward.
  5. Cook the sandwiches
    Heat a large skillet or griddle over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, until the bread is golden brown and crispy and the cheese is completely melted. You may need to press down gently with a spatula to ensure even cooking. Work in batches if needed to avoid overcrowding the pan.
  6. Serve
    Remove sandwiches from the heat and let them rest for 1 minute. Cut each sandwich in half diagonally and serve immediately with additional barbecue sauce on the side for dipping if desired.
